With EliteHud is it possible to use live HUD?
or just the hands that were previously stored?

The EliteHUD converter will create hand history files for the hands you are currently playing so the HUD will update as each hand is imported.

There haven't been any updates with regards to adding HUD support for CoinPoker. I don't know if/when support will be added but you can register your interest and be automatically notified if support is added via a Support Ticket.
