While playing one session and restart I hud starts again keep your hands on the hand of 10-11, maybe you know what's the problem?

I'm not sure exactly what you mean - can you explain further?

how to start playing saved hand shows 0 (hud), then I play about 13 hands .. and again from scratch .. I can not learn about the opponent as many hands your opponent does not show: (

Your opponents should show their lifetime of data with the default settings, only your hands are session only.

Are you playing sit and go tournaments? If so and you enabled Player Ranges via he Configure --> Configure Hud --> Hud Options tab that could mimic this behavior, or if you turned on stats from current blind level only - then the stats would reset when the table size changed (or the blind level changed). Turning those settings off would show lifetime data.
