Starting Hand EV

Is it possible to show the Starting Hand EV in the HUD?

I'm not sure what you mean by that, if you just want a table with values for each hand you could build one. However PT3 does not know anything about the current hand in progress and as such it couldn't tell you anything based on the actual hand you hold until the hand is over.

I would like the hud to display the EV of my hole cards preflop.

As Kraada said, your hole cards are not know until they are read from the hand history file at the end of the hand, so we can't display the EV of your specific hole cards.
You could write a chart like that in PT3 using text, but it won't change based on the current hand you're holding.

OK, the next question is.....How does one create a chart? Can you link me up with a tutorial?

Can the chart be displayed in the HUD?

To set up this kind of chart in the HUD use a series of text fields. See this tutorial for general HUD config information, or this one for more information on working with new HUD groups.
